Beef and Sour Cream Enchiladas

We love Mexican food in our home.
I'm a BIG meal planner and we don't eat out very often.
I'm always looking for ways to create delicious restaurant style meals at home.
This dish tastes like REAL Mexican restaurant food :)
Plus with my homemade salsa and guacamole....MMmmm!!
You can use chicken or steak in the place of ground beef if you like.
**this meal freezes very well/ I made two pans and froze them for a family vacation last year**

Beef and Sour Cream Enchiladas
Ground Beef, Tortilla Shells, Enchilada Sauce, Green Chilies, Fresh Salsa, Sour Cream, Mexican Cheese, Cilantro
Combine the enchilada sauce, sour cream, salsa, green chilies, and cilantro. Mix Well
Brown ground beef, add taco seasoning and prepare according to package
Add 1 cup of mixture
Add half the cheese/ Mix well
 Warm tortillas. Ready to assemble


 Top with remaining mixture
 Remaining Cheese
 Bake 350 for 35-40 min covered. Then 10 min uncovered. Or until bubbly and golden
Top with fresh cilantro

Beef and Sour Cream Enchiladas:

1 lb Ground Beef
1 pkg taco seasoning
1 3/4 cup sour cream
1 can enchilada sauce
1 cup salsa
1 can (7 oz) chopped green chilies
3/4 cup chopped fresh cilantro
3 cups Mexican Cheese (or favorite)
10 flour tortillas

Lasagna

Here is my tried and true Lasagna recipe.
This is one I've made since I was young girl.
I actually took this to elementary school for a project on Italy :)
This freezes very well, so you could make it up ahead of time and lay it out in the morning.
Hope you will try this great recipe


Hamburger, Spaghetti Sauce, Sour Cream, Italian Seasoning, Mozzarella Cheese, Garlic, Parmesan Cheese, Lasagna Noodles
Brown Hamburger, Add Italian Seasoning
Garlic....
 Boil Noodles
Add Sauce, Let simmer
 Ready to layer.  Spray a 9 x 13 pan with cooking spray. Lay Cooked Noodles
 Half the sour cream
 Half the Mozzarella Cheese, Parmesan Cheese
 Top with sauce mixture/ Repeat
Ready to Bake 350 degrees. 30-40 min until bubbly
 Let cool a few minutes before cutting

Lasagna:

1lb Hamburger
1 jar Spaghetti Sauce
2 TB Italian Seasoning
3 cloves garlic- crushed
Sour Cream 16oz
Mozzarella Cheese 4 cups (16oz)
Parmesan Cheese (as desired)
6 Lasagna Noodles

Chicken Piccata

This is one we really enjoy.
It looks and tastes fancy, but is easy to put together.
You may even have all the ingredients in the pantry and fridge.
Hope you enjoy!

 Chicken Piccata
 White Wine, 3 Boneless Chicken Breast, Lemon, Butter, Olive Oil, Flour, Salt, and Pepper
 Pound Chicken Breasts, Cut each in half

Drudge with Flour, Salt, Pepper Mix 

 Brown in skillet with Olive Oil
 Remove Chicken, Add White Wine, Lemon Juice, Lemon Zest, and butter.
 Once sauce begins to thicken. Return chicken to pan. Coat with sauce
Ready to serve


Chicken Piccata:

3 Boneless Skinless Chicken Breast
Olive Oil
1/2 cup white wine
Juice of one Lemon
Zest of one Lemon
Butter 4 TB
Flour, Salt, Pepper

Chocolate Trifle

Devils' Food Cake Mix, 2 boxes instant pudding, whipped topping, heath toffee bits, chocolate syrup

Prepare cake mix according to package. Cool. Cube
Prepare pudding according to package 

 Start to layer. Cake, Pudding, Whipped Topping, Toffee Bits, Syrup. Repeat
 Repeat to top.
 yummy
Chill overnight...

Chocolate Trifle:

1 box Devil's Food Cake Mix
1 box Chocolate Pudding Mix (or two)
1 box Vanilla Pudding Mix
Whipped Topping
Chocolate Syrup
Heath Toffee Bits

Meatloaf

I love to create recipes and try new things, however sometimes it is the good ole' recipes that are the best!
Especially, when those recipes are attached to special memories.
This Meatloaf is one of those!!  My mom used to make this for church potlucks and family gatherings.
I always think of her when I make it (*hi mom* love ya)
Meatloaf is something folks just don't make anymore...not sure why.
This recipe is quick, easy, and delicious.  My hubby just pulled in and he will be one happy man!


 Hamburger, Sage Sausage, 1 egg, onion, crackers, BBQ, ketcup, Marinara Sauce
 Crush Crackers
 chop onion
 beat egg
 Throw everything into a large bowl
Mix Well-hands work best-you want the loaf to be "wet"
 Shape into loaf, spread BBQ on top, sprinkle with bacon bits
Toss in some baby carrots and potatoes and you have a meal (salt and pepper everything)
Bake 350' 1 hour...yummy!
The top should be dark and crispy

Meatloaf:

lb Hamburger
1 lb Sage Sausage
1 small onion-chopped
1 egg- beaten
1 pkg crackers-crushed
ketcup
BBQ Sauce
Mariana Sauce-secret ingredient (just about 1/4 a cup)
**I never measure the ketcup or BBQ, you just want a nice wet loaf**
I put in close to a 1/2 cup of each
