Perfect Steak-take one

 I make steaks two different ways
Wet Marinade and Dry Rub
This is my Dry Rub Steak...you will love it
It's simple, fast, and oh, so good!!
 Lay out your favorite steak. (I used Ribeye)
You could use Sirloin, T-Bone or your or favorite cut of meat
We butcher our own beef raised by a family member.
Also have ready Seasoned Salt and Lemon Pepper Seasoning
 Sprinkle Seasoned Salt and Lemon Pepper on Steaks-Both Sides
Make sure the steaks have been at room temp for about 20 mins. before cooking
 Melt half of a stick of butter in a hot grill pan or skillet
 Butter makes everything better
 Place the steaks in the hot pan- Cook about 2-3 min
I like to move it sideways and cook about 2-3 more min.
 Then flip and repeat
Medium is 160 degrees and in my humble opinion the best way to cook steak
Let the meat rest for about 10 min after cooking
This will hold in all the wonderful juices!
Serve and wait for the oohhs and aahhs from your family!

2-4 Ribeye Steaks
Seasoned Salt
Lemon Pepper Seasoning
1/2 Stick Butter

Spring Time

I love Springtime!
Really, I love every season.
After a long winter...Spring is such a welcome sight.

Carla's Santa Fe Chicken

Sante Fe Chicken

A few weeks ago hubby and I were trying to cut back on the sugar and bread.
I was looking for ways to "spice" up chicken.
I created this recipe and it fast becoming a family favorite.

 You need Boneless Chicken Breasts, Taco Seasoning, and Limes
 Place the chicken in a plastic baggie. Coat with taco seasoning
 Pour lime juice over chicken
Sqeeze the bag to get the chicken coated with seasoning and lime juice
Set aside for a few hours to marinade

 Grate some Monetary Jack Cheese
 Head out to the grill and cook that yummy chicken
Grill pan works fine also
 Once the chicken is cooked top with fresh salsa
 Then the cheese...I know right!!
Top with crushed tortilla chips!

It's soooo goooodd!!
Trust me!

Carla's Santa Fe Chicken:

3 Boneless Skinless Chicken Breats
1-2 Limes -juiced
1 pkg Taco Seasoning
Monetary Jack Cheese-grated

Just make sure you buy two bags of chips!!

Funny Stuff


I was blessed to spend the weekend with my mom, grandma, and lovely aunts.
Yeah, the guys were around ;)

We ate way to much homemade ice cream and birthday cake
(Happy 86th Grandpa)

Saturday night us ladies hit Wallyworld
As we walked in so did my hubby.
The night before Mother's Day.hmmmmm

I walked right over to the Cookbooks
Picked this up, walked over to him (in the card section)

You are Blessed!

It is so easy to lose our vision.  We are so blessed.
Most of you reading this are blessed with:

A warm home
One or more vehicles
 Pantry full of food
Fridge full of food
Freezer full food
A warm bed
Soft Pillows
Running Water
A Hot Shower
A washer and dryer
A comfy couch
A kitchen table
Closet full of clothes
An oven to cook food
and the list goes on and on...



We are so blessed and it is easy to forget just how the Lord has blessed us.
We are so quick to be discontent. Make today the day you count your blessings!

Baked Beans


I don't know about you but I LOVE grilling out.
Juicy Burgers, Sizzling Steaks, and Chicken Grilled to perfection.
One of my favorite side dishes when grilling out is Baked Beans.
This is my recipe I have tweaked over the years.
I know you will LOVE this one! 


 Gather some BBQ, Ketchup,Worcestershire, Garlic, Bacon, Brown Sugar, and Baked Beans
 Saute' Bacon and Garlic
 Add the garlic and remove from heat-Garlic burns fast and will not taste good burnt
Cook garlic for about a minute or two then add the can of beans
 Add BBQ sauce, Ketchup, Worcestershire, Brown Sugar-Cook until bubbly
 Pour into baking dish
 Bake at 350 for 10-20 min. They will get nice and thick
Serve and Enjoy!


Baked Beans:

1 Can Baked Beans
Ketchup-1/4 cup
BBQ Sauce-1/4 cup
Worcestershire Sauce-2 dashes
Brown Sugar-2 TB
Bacon-I cut off about 3 strips
Garlic-two cloves

*To be honest, I NEVER measure with this recipe*
I add the Ketchup, BBQ, and Worcestershire to taste
