Strawberry Cream Pie

Strawberry Cream Pie
Fresh Berries, Sugar, Corn Starch, Strawberry Gelatin, Water
Mash 2 cups of berries and 1/3 cup of water
Bring to boil
Stir in the sugar/corn starch mixture. Boil until thick
Remove from heat, add gelatin, stir
Place a package of cream cheese and 1/3 cup of hot berries in a bowl
 Whisk Well
 Place the cream cheese mixture into a baked pie shell
(Homemade is best, we can talk more about this later ;) )
Now a layer of fresh berries
Add remaining berry mixture- Refrigerate for 3-5 hours
Whip up some homemade whipping cream-Cool Whip will work!
Top the chilled pie with whipped cream and garnish with berries
Now watch it disappear!

1 Cup Sugar
 3 TB Corn Starch
1 pkg Strawberry Gelatin
2- 3 Cups Fresh Berries
1/3 Cup Water

Weekend Fun with Strawberries




This weekend we went to my parents house for Father's Day.
My Grandma LOVES fresh berries.  She has passed that love down to my mom and I
She really wanted to go pick some berries. So I got online and found us a picking patch
We had such a fun day!

Chicken Gyros

Chicken Gyros

I found a recipe for delicious Chicken Gyros online awhile back.
I tweaked it to make it my own
This is the result...A very wonderful warm weather dinner.
When I do my meal planning  I like to have "warm weather" meals on the list
This one tops the list!

 Chicken Marinade:
Greek Vinaigrette, Lemon Juice, Black Pepper, and Oregano
Whisk together

 Pour the marinade over the chicken and refrigerate until ready to grill
 The Cucumber Sauce aka. Tzatziki Sauce
Sour Cream, Yogurt, Lemon Juice, Garlic, Salt, Pepper, Dill, Cucumber, Rice Vinegar, Olive Oil, Mediterranean Seasoning

 Put all the ingredients on a bowl
 Mix Well-
 I use a bowl with a nice lid.... you will want to let the sauce set for an hour or more
 Mix together some Roma Tomatoes and Feta Cheese
 MMMmmmmm
Warm the Pita Bread

 Grill and Slice the Chicken

1/2 tsp Black Pepper

Tzatziki Sauce:
1/2 Shredded Cucumber
1 Cup Plain Yogurt
1/4 Cup Sour Cream
1 tsp Sea Salt
1 TB Lemon Juice
1/2 TB Rice Vinegar
1 tsp Olive Oil
2 clove Garlic-minced (I use a Garlic Press)
1 TB Chopped Fresh Dill
1 1/2 tsp Mediterranean Seasoning
Pepper to taste

Pita Bread
Lettuce
Red Onion
Olives-optional

How to assemble:
Warm Pita
Lettuce
Chicken
Red Onion
Feta/Roma Mixture
Tkatziki Sauce

Strawberry Freezer Jam


 Strawberry Jam

I made some Strawberry Freezer Jam this afternoon.
It always reminds me of my mom and Grandma.
Remember when using fresh berries from the patch, they bleed much worst than store bought ones.
You can find our recipe on the Sure Jell packet.
Yes, I know it has lots of sugar. It's a treat to be enjoyed in moderation :)

Fruit Pizza


Fruit Pizza

We are enjoying a wonderful family vacation this week.
Every night another group makes dinner...Oh, the food has been wonderful!
This fruit pizza is one my mom made growing up and now my sister is famous for bringing it to events.
It is simple, beautiful, portable, and just yummy!!

Sugar Cookie Dough, Cream Cheese, Powdered Sugar, Strawberry Jello, Corn Starch, Sugar, Bananas, Strawberries, Kiwi, Pineapple, and Mandarin Oranges
Press out the Cookie Crust
Bake at 350' for 10-12 min
Mix the Cream Cheese and Powdered Sugar
Spread on Cookie Crust
Place the Bananas on the Cream Cheese Mixture
Make the glaze (this is what makes THIS Fruit Pizza special)
Place the Water and Sugar in pot-boil
Get the fruit ready to go
Once the water comes to a boil add corn starch
Whisk and add the Strawberry Jello-whisk until desired thickness
Drizzle the glaze over the bananas
MMmmmmm

Now start layering the fruit
Yummy!
You will be the hit of every summer get-together!!
Just don't bring it to a party with me or my sister ;)
