Lemon Blueberry Muffins

{Lemon Blueberry Muffins}

I love to bake!
One of my favorite things to make is muffins.
They are quick and easy and freeze really well.
I can bake up a few batches and then freeze them for a busy morning, or a lazy Saturday.
This is one of our families favorite.
I hope you will enjoy them as well.

Flour, Sugar, Veg Oil, Buttermilk, Eggs, Lemon Extract, Salt, Baking Powder, Blueberries

Mix together the sugar, oil, eggs, lemon extract, and buttermilk

Sift the flour, salt, and baking powder

Slowly mix the dry ingridents into the wet

Drop in the blueberries

Wisk together

Bake 400' for 15-18 min
Until cake tester comes out clean

Cool

Enjoy!


Lemon Blueberry Muffins:

2 Cups Flour
1 TB Baking Powder
1/2 tsp Salt
1 cup Sugar
2 eggs
1 Cup Buttermilk (or milk)
2 tsp Lemon Extract
1/2 cup Veg Oil
1 1/2 Cups Blueberries

Makes about 16 muffins
