Candied Pecans

{Candied Pecans}

I LOVE roasted pecans and almonds.
These candied pecans are similar to the ones they roast at the mall.
You know the amazing aroma we smell as we shop.
Truth is we only get to the mall a few times a year.  But we always buy some of these.
Now you can create them at home. Filling our homes with that wonderful aroma.

Pecans (or almonds) Sugar, Egg White, Salt, Cinnamon, Pumpkin Pie Spice, Water

Place the pecans in a bowl.  Coat with egg white. Cover with Sugar, Salt, Cinnamon, Spice, Water

Mix till well coated

Place on baking sheet and Bake 250'
30-35 min  Stir every 10 min
Cool
Enjoy!

Candied Pecans:

1/2 LB Pecan Halves
1 Egg White
1/2 Cup White Sugar
1/2 TB Water
1/2 tsp Sea Salt
1/4 tsp Cinnamon
1/8 tsp Pumpkin Pie Spice


Another great idea:

Grab some Planters Winter Spiced Nuts at the store

Roast in the oven at 250'  5-10 min

Cool. Serve .Enjoy!

Five Minute Pie Crust

 Five Minute Pie Crust:
(Butter cubed, Ice Water, Flour, Sugar, Salt)

I love Thanksgiving!
It's the way the holiday's should be.
Getting together with family and enjoying good food, fellowship, and fun.
Giving Thanks to the Lord for all the blessings He has given us!
No stress over spending money on gifts!!
Yes, Thanksgiving is wonderful.

Before you run out and get that store bought pie crust, give this one a try.
It is so simple. I promise :)
Then fill. Bake and enjoy!




First I cube my butter and stick it in the freezer while I get my other ingredients around.
COLD BUTTER..is the secret to a GREAT pie crust.
Grab the food processer. Place flour, butter, sugar, salt, and water(4TB) into processor.


Pulse
It will start to look like this
add another 2 TB Ice Water
Pluse. Now it looks like this
Keep pulsing until you get this
It was easy, huh?
Dump the dough unto some plastic wrap
Wrap it up quick. Don't touch it to much.
You don't want to melt the butter.
Now, place this in the fridge for a few hours.
Or a few days.  Then roll it out fill.

Perfect Pie Crust:
(9 inch pie plate)

1 1/3 Cup Flour
1 Stick Butter- cubed (very cold)
1/2 tsp Salt
1/2 tsp Sugar
4-6 TB ICE WATER

Double Crust:

2 1/2 Cups Flour
2 Sticks Butter- cubed (very cold)
1 tsp Salt
1 tsp Sugar
6-8 TB Ice Water

Buffalo Chicken Dip

{Buffalo Chicken Dip}

I had a dip similar to this at a get together.
Once I have something I enjoy I'll hop online and search the recipe.
Then I compile what looks good and try to put my own spin on it.
This was my end result for Buffalo Chicken Dip.
This is a perfect snack for the football game, fall get together, or family holiday party.

Cream Cheese, Mozzarella Cheese, Can Chicken, Blue Cheese Dressing, Hot Sauce
Place all ingredients in a bowl and mix well

One for now- one for later
Place in larger dish for a bigger group

Hide this one in the fridge.  Then when you are relaxing after the kids go to bed later in the week
Hubby will mention how awesome that dip was...you can sneak away to the kitchen and heat it up.
Yeah, he will think you are the best wife in the world!!!

Serve this dip with bread warmed in the oven and celery sticks.


Buffalo Chicken Dip:

1 Pkg Cream Cheese- softened
2 Cups Mozzarella Cheese
1 Cup Blue Cheese Dressing
1/2 Cup Hot Sauce
2 Can Chuck Chicken- drained

Mix Well
Place in greased baking dish

Bake 350' till brown, hot, and bubbly

White Chili with Chicken

{White Chili}

I have to admit I love all the seasons.  I enjoy the cool fall days and breathtaking foliage.
I love winter and beautiful snow.  I love how everything comes to life in the spring.
I love moving into "soup season"  This is one of many soups we enjoy.
It was a recipe I got from my cousin Gina.  It is very good.
We all gobble it up..and with some warm crusty bread-perfection!

Heavy Cream, Spices, Great Northern Beans, Cooked Chicken, Corn, Green Chilies, Chicken Broth
Saute' Onion in Olive Oil.  Add Spices and Garlic. Stir

Add Corn, Beans, Green Chilies, Chicken Stock, Chicken

Stir

Simmer 10-20 min

Making a roux- 2 TB Butter (melt) 1 1/2 TB Flour

Whisk until smooth 
Add to soup 
Add 4 TB Heavy Cream
Stir- Simmer 10 min
 (then you can turn down the heat until ready to serve)

Serve with cheese and crusty bread


White Chili with Chicken:

3 TB Olive Oil
1 Onion-chopped
2 tsp Chili Powder-or less
1 1/2 tsp Cumin
1 tsp Oregano
2 Cloves Garlic-minced(I use a press)
2 Cans (15oz) Great Northern Beans
3-4 Cups Chicken- Cooked and Diced
2 Cup Frozen Corn
1 Can (7oz) Green Chilies
3 Cups Chicken Broth
1/4 tsp Sea Salt

 Roux:
2 TB Butter
1 1/2 TB Flour

3-4 TB Heavy Cream
Shredded Cheese
Crusty Bread


Directions:

1. Saute' Onion. Add Spices and Garlic
2. Add Beans, Chicken, Corn, Green Chilies, Broth- Simmer 10-20 min
3. Prepare Roux and Add to Soup
4. Add Heavy Cream- Simmer 10 min
5. Heat low until ready to serve.
6. Serve with Shredded Cheese and Crusty Bread
7. Enjoy!
