{Meatball Subs}
You just can't beat some good ole' comfort food.
This recipe is the ultimate comfort! Moist and tender meatballs matched up with semi-homemade simmering sauce. Oh, boy...does it get any better?

The Sauce:
2 Jars Sauce (homemade or favorite store bought) Parmesan Cheese, Fresh Parsley, Fresh Basil, Fresh Garlic, Stevia (or sugar), Salt and Pepper.
Place the sauce into a pot, add all the other ingredients.
Stir well, cover, simmer.
Meatballs:
Hamburger, Sausage, Parmesan Cheese, Onion, Eggs, Parsley, Bread Crumbs, Milk
Mix the onion, hamburger, and sausage well
(hands work best for mixing)
Add the eggs, milk, bread crumbs, parsley, Parmesan cheese
Mix Well
Form Meatballs (they also freeze well)
Makes about 24-26 Meatballs
Brown in Olive Oil.
They are going to cook fully in the sauce
Drop the Browned Meatballs into Sauce
Simmer 2 hours..or all afternoon.
The longer these cook....the better they taste :)
Slice some bread
Top with Meatballs and Cheese (mozzarella or provolone)
lots of cheese!!
Melt Cheese in 350' oven
Enjoy!!
Sauce:

2 TB Fresh Parsley Chopped
3 Cloves Garlic- pressed
2 Packets Stevia (or 4 TB sugar)
Salt and Pepper
Meatballs:
1 LB Hamburger
1 LB Sausage
1 Small Onion -Chopped
1/4 Cup Parmesan Cheese
1 Cup Bread Crumbs
2 Eggs -beaten
1/2 Cup Milk
4 TB Fresh Parsley
Salt and Pepper

ReplyDeleteI didn't have sausage or ground beef in the house so I tried this recipe with ground dark turkey...still amazing! It was so easy and my toddler asked for 3rds (which never happens)!
