{Pasta e Fagioli}

Yes, I'm still alive and kicking!
Just busy with life...blogging always takes a back seat to my family and loved ones
That said- it's nice to be back posting a recipe.
The weather turned cold here the past few days....so soup was on the menu plan.
We enjoyed the Olive Garden copycat of Pasta e Fagioli.
It was very easy and very delicious!!! I served it with homemade bread.

Gather the ingredients:
Brown the hamburger
Add the veggies, garlic, and seasonings
That garlic press in hard for a 4 year old :)
Cook for 10 min
Add remaining ingredients
Simmer 1-2 hours
Add cooked pasta ( al dente')
Pasta e Fagioli:
1 lb ground beef
1 cup onion -chopped
1 cup celery- chopped
1 cup carrot- chopped
2 garlic cloves, minced
2 can diced tomatoes
1 can red kidney beans
1 can great northern beans
1 15oz can V-8 juice
1 15oz can tomato sauce
1 TB white vinegar
1 1/2 tsp salt
1 tsp oregano
1 tsp basil
1/2 tsp pepper
2 pkg. Stevia in the Raw (or sugar)

1/2 pound ditalini pasta
